Beautiful local Suffolk Cross lamb shoulder sourced by H Dayus Master Butchers from Rowley Farm in Holt Heath. Brined for 24hrs and rubbed with my shawarma rub then smoked over local charcoal from Birtchwood Forestry Hereford and wild cherry wood chunks.
